As I see it, chef David Toutain was influenced by the agenda of the remarkable and revolutionary model mentor, chef Alain Passard, with whom he worked in the past.
Chef Toutain operates a highly creative restaurant with a strong message of connection to earth and the source of the raw materials that we eat. He brings wild visionary blends into his kitchen that demonstrate a multitude of textures and palatable combinations that are just right on! The presentations tell engaging stories of Mother Earth with surprising and delicious flavors that hit your taste buds right where you like it with every dish served.
For me, the highlight of this restaurant is Toutain’s inspiring virtuoso ability to produce super ingenious dishes, each one tasting as good or better than the other. A rare combination which only a handful of starred chef are capable of. We love to come back to familiar tastes, which is why the more creative and innovative a restaurant is, the farther away it naturally moves from familiar tastes. So creativity comes with a risk that the diner might get all hyped up about the creation but won’t necessarily say he likes the taste. At David Toutain’s restaurant, the two parallel concepts of taste and design merge fantastically dish after dish. This is what makes this restaurant exceptionally great for me.
The service is at the same time professional as it is pleasant and informal, clean from the heavy snobbish vibe. While you’d be eating from the tasting menu you will be paying the same price you would for lunch or dinner.
